This is a very quick and easy salad to prepare and is a perfect accompaniment to cold meats; salmon or as part of a meze platter. Although this salad can be served straight away, its much better left in the fridge for a few hours to let the onion soften a bit and the flavours to develop.
- Thinly slice the cucumber, or if you have a spiraliser, cut into three chunks and spiralise.
- Add the cucumber to a large bowl and mix with the onion. Season with salt, toss together and leave to stand for 10 minutes.
- Add the sugar, vinegar, water and chopped dill to the cucumber mixture.
- Mix well together until completely combined and then chill for a few hours, or until ready to serve.
