Pickled Cucumber and Dill Salad

This is a very quick and easy salad to prepare and is a perfect accompaniment to cold meats; salmon or as part of a meze platter. Although this salad can be served straight away, its much better left in the fridge for a few hours to let the onion soften a bit and the flavours to develop.

  1. Thinly slice the cucumber, or if you have a spiraliser, cut into three chunks and spiralise. Step picture
  2. Add the cucumber to a large bowl and mix with the onion. Season with salt, toss together and leave to stand for 10 minutes. Step picture
  3. Add the sugar, vinegar, water and chopped dill to the cucumber mixture.
  4. Mix well together until completely combined and then chill for a few hours, or until ready to serve.
